At Tenuta Maria Teresa, the passion for the land and tradition come together to offer high-quality organic products, made with natural and sustainable methods. Our company, classified as agritourism since 2003, produces fine wines, organic extra virgin olive oil, natural honey, and handcrafted Senatore Cappelli ancient grain pasta, in respect of the environment and the authenticity of the raw materials.

Our Organic Wines.

Our red and white wines, all certified organic, are the result of a careful selection of grapes grown in the vineyards of our estate. Thanks to a winemaking process that combines tradition and innovation, each bottle expresses the authentic character of the Lucca region.

Red Wines IGT and DOC: with an intense and structured flavour, perfect for pairing with typical Tuscan dishes.

White Wines: fresh and aromatic, ideal for aperitifs and pairing with fish dishes.

Extra Virgin Olive Oil Organic

We produce a high-quality organic extra virgin olive oil, cold-pressed using only mechanical methods, which preserves its flavour and nutritional properties. Our oil, with a harmonious and balanced taste, is ideal for enhancing the flavours of Mediterranean cuisine.

    We produce a superior quality organic extra virgin olive oil, obtained directly from the olives and exclusively through mechanical processes. The olives, carefully selected, are immediately milled in the COMPANY OIL MILL, with temperature control during the process ("COLD EXTRACTION"). This results in a product unique in both quality and flavour refinement.


    Our oil is guaranteed by the Ministry of Agricultural, Food and Forestry Policies.

  • Characteristics

    Oil characterised by intense olfactory notes of fresh olive and vanilla. On the palate, the fruity taste of olives, at the right stage of ripeness, has a medium intensity, accompanied by notes of fresh grass, ripe tomato, and a slight hint of artichoke. The aftertaste is smooth, sweet, with almond notes.

Ancient Grain Pasta 
Senatore Cappelli 

At Tenuta Maria Teresa, we cultivate the ancient durum wheat Senatore Cappelli in the lands of Lucca, where it is stone-milled to preserve all its nutritional qualities. Our pasta is bronze-drawn and slowly dried to ensure a perfect texture and authentic flavour. Every stage of production takes place within our company, from cultivation to final packaging.

    The pasta is made from Senatore Cappelli wheat, which has a low gluten content, grown on virgin soil that has not been cultivated for years. Senatore Cappelli is an ancient wheat (1920) of superior quality, non-modified, with low productivity (15 quintals per hectare compared to the 60 quintals per hectare of current wheat varieties), and it has unique and highly nutritious characteristics with low gluten content.


    No chemicals are used in the production of the wheat throughout the entire production chain, from soil preparation, during growth, to cleaning and storage in silos.

    The flour used has a low gluten content and is stone-milled, so the granulation is not constant.


    It is bronze-drawn and dried very slowly.

    By drawing stone-milled flour with variable granulation and low gluten content (which makes it less elastic), the texture and compactness are variable. Therefore, cooking must be done delicately by bringing the water to a boil and then reducing it to a minimum before adding the pasta. Simple sauces that do not require vigorous stirring are recommended. For more complex sauces, it is advised to cook it like a risotto, together with the sauce. THE RESULT IS A UNIQUE PRODUCT IN TERMS OF NUTRITIONAL VALUE, AUTHENTICITY, FLAVOUR, AND DIGESTIBILITY.


    The combination of stone milling, slow drying, and low gluten content leads to cooking times ranging from 4 to 6 minutes, depending on the shape, which is much lower than industrial pasta.

Our honey
Organic Natural

Our Italian organic honey is certified by the Ministry of Agricultural, Food and Forestry Policies and controlled by I.C.E.A., the Institute for Ethical and Environmental Certification, authorised by the Ministry of Agricultural, Food and Forestry Policies. IT IS PRODUCED FROM ORGANIC FARMING (Reg. CE834/07; CE889/08) and is made naturally, respecting the bees' cycles and without the use of chemical treatments. We offer three varieties:

  • Acacia Honey

    According to popular pharmacopoeia, it has strengthening properties, liver detoxifying effects, anti-inflammatory properties for the throat, and a mild laxative effect. It is a highly sought-after honey for its delicate and non-cloying flavour; it is excellent for sweetening without altering the taste and aroma of what it sweetens.


    Colour: Water white

    Taste: Light, delicate; reminiscent of the sweetness of ripe fruit

    Aroma: Light, non-persistent; reminiscent of the flower

    Crystallisation: Very slow, even after two years; it forms a white, soft paste, not hard; the crystals are large but easily soluble and slightly opaque.


  • Wildflower Honey

    The wildflower honey comes from many floral species and contains the qualities of the numerous nectars from which it derives.


    Colour: Variable depending on the nectar source.

    Taste: Sweet, fruity, pronounced, and strong.

    Aroma: Flowers and various fruits.

    Crystallisation: It has a granular consistency and crystallises easily.

  • Chestnut Honey

    Among the varieties of chestnuts, only the wild ones produce honey. The bees collect nectar from the male flowers, which are rich in pollen, as the primary method of pollination for chestnuts is wind. For this reason, chestnut honey contains a large amount of pollen, giving it a very strong taste. It is also very rich in tannins.


    Colour: Dark

    Taste: Strong, persistent, sometimes cloying if pure

    Aroma: Pungent

    Crystallisation: Slow when pure or mixed with acacia honey, compact and coarse if mixed with forest or meadow honey.
